Vegan BBQ Pizza

It all started with a taste for BBQ chicken pizza. I have no desire for chicken in my vegan/vegetarian lifestyle, ah but that BBQ pizza taste!

bbq cauliflower pizzaOne thing kind of led to another with this culinary experiment, actually its three recipes forged together.

First I found and loved this recipe for Mung Bean and Quinoa Crepes. It was really easy and tasty and I thought wouldn’t that make a good gluten-free pizza crust (and it does!) The recipe makes 2 nice size personal pizza-size crusts.

Next I found this recipe for Spicy Buffalo Cauliflower Bites. This was so unbearably good the first time I made it I decided to try it with BBQ sauce. This recipe uses a cup of flour, but you could use any other kind of gluten free flour you have handy to keep this dish gluten free.

Then I made a simple red pepper hummus (chickpeas, tahini, roasted red peppers, dash of lemon juice and garlic powder) to use as the pizza sauce.

  1. Place the crepe on a foil covered pizza pan spritzed with cooking spray
  2. Cover it with hummus
  3. Top it with thinly sliced onion, raw red pepper, black olives and the bbq cauliflower
  4. Sprinkle with a little shredded cheese (optional to make it vegan)
  5. Bake at 425 for 12 minutes

    This sounds delicious!! I love the recipe for buffalo cauliflower bites. I need to make that all on its own. This combination sounds extra yummy though.
