    Shiitake Pesto Pasta

    1 c Brown rice penne

  • 1 c Asparagus chopped
  • 1/2 Onion chopped
  • 2 cloves Garlic chopped
  • Handful Shiitake (or any other) mushrooms chopped
  • Handful grape tomatoes halved
  • 3 tbs pesto (from a jar, my homemade pesto is gone!)


  1. Cook penne per box, drain, don’t rinse.
  2. While that’s cooking, saute asparagus, onion, garlic and mushrooms in veggie broth with S&P to taste, add tomatoes just for the last couple minutes, not to cook, just to heat through.
  3. Mix all and Pesto in a bowl.
  4. Add a light sprinkle of nutritional yeast (or Parmesan cheese) quick, easy filling!
